Meat Loaf in Freshka Sesame Seed Burger Bun

Makes 8 servings
Ingredients: 2 pounds lean ground beef
½ cup finely diced green bell pepper
½ cup finely diced zucchini
½ cup finely diced onion
½ cup unseasoned breadcrumbs
1 garlic clove, minced
¼ cup tomato sauce
1 egg
Salt and pepper
½ cup ketchup
½ cup barbecue sauce
Any cheese or any other type of melting cheese
8 Freshka Sesame Seeded Burger Buns, toasted
For garnish: Lettuce and tomato slices
Preparation: 1. Preheat the oven to 425°F. 2. In a large bowl, mix together the ground beef, green bell pepper, zucchini, onion, breadcrumbs, garlic, tomato sauce, egg, salt, and pepper. Make patties and place them on a baking sheet.

3. Bake for about 20 minutes, then flip them and cook for another 10 minutes.

4. Mix together the ketchup and barbecue sauce, drizzle on the burgers, and bake for an additional 10 to 15 minutes.

5. Add a slice of cheese to each burger and bake until melted, about 1 minute.

6. Remove the burgers from the oven and place the burgers on buns. Serve garnished with lettuce and tomato.

Freshka Ultimate Homemade Burger

Makes 8 servings
Ingredients
• 2 pounds freshly ground chuck, (at least 80% lean, a.k.a. 80/20)
• 1 tablespoon onion powder
• 1 teaspoon salt
• 1 teaspoon freshly ground black pepper
• 12 slices deli-counter any cheese
• 6 large burger buns, preferably homemade, toasted if desired To garnish
• ketchup
• mayonnaise
• thousand island dressing
• sliced red onion
• sliced tomatoes
• sliced pickles
• fresh lettuce leaves
To serve:
8 Freshka Burger Bun, cheddar cheese (1/2 ounce per burger), lettuce, and pickles
Preparation:
1) In a large bowl, mix ground beef, onion powder, salt and pepper until just combined. Do not overmix, or your patties will be tough.
2) Divide into six portions and form patties, without pressing too hard. They should be uniform in thickness. Smooth out any cracks using your fingers. Make these right before you grill them, so they stay at room temperature.
3) Preheat your grill, grill pan or cast-iron skillet to high heat and add burger patties. If using a grill, cover with the lid.
4) Cook until the crust that forms on the bottom of the burger releases it from the pan or grate — about 2 minutes. Gently test, but don’t flip it until it gets to this point. When burgers lift up easily, flip, add two slices of cheese to each, close lid if using a grill, and cook on the other side for another 2-3 minutes for medium to medium rare.
5) Remove burgers with a sturdy metal spatula and transfer to a plate. Allow to rest for several minutes, then transfer to buns.
6) Garnish as desired and serve immediately.

Lunch Time Sandwich in Freshka Pita Bread

Ingredients 3 tablespoons extra-virgin olive oil
Choice of : Falafel, Chicken, or Kabab
1 tablespoon vinegar 1 1/4 cups chopped seeded plum or cherry tomatoes
1 cup diced seeded peeled cucumber
1 cup chopped green bell pepper
2/3 cup chopped red onion
1/2 cup chopped radishes
1/2 cup chopped fresh Italian parsley
1 cup crumbled feta cheese (about 4 1/2 ounces)
4 Freshka Pita Bread,

Preparation Whisk olive oil and vinegar in large bowl. Season dressing with salt and pepper. Mix tomatoes, cucumber, bell pepper, red onion, radishes, and parsley into dressing. Stir in feta cheese.

DO AHEAD: Salad can be made 2 days ahead. Cover and chill. Using slotted spoon, transfer salad mixture to pita bread halves. Serve sandwiches immediately.

Healthy Veggie Burger in Classic Burger Bun

Makes 6 servings
Ingredients:
1 cup quinoa, rinsed
2 cups of water
1/2 teaspoon kosher salt
1 cup chopped fresh cilantro leaves
1/2 cup whole wheat breadcrumbs, unseasoned
1 medium white onion, finely chopped
1 large egg
1/3 cup chopped carrot
1/3 cup chopped green beans
1/3 cup sweet corn
1/4 cup feta cheese
1 clove garlic, minced
1 tablespoon extra-virgin olive oil
1 teaspoon ground cumin
1/4 teaspoon freshly ground black pepper
6 Classic Freshka Buns
For garnish: Avocado, lettuce, and tomato
Preparation:
1. Preheat the oven to 400°F.
2. In a medium saucepan combine the quinoa, 2 cups of water, and 1/4 teaspoon salt. Bring to a boil then reduce the heat to low and simmer until the quinoa is tender, about 15 minutes. Transfer to a large bowl. Add the cilantro, breadcrumbs, onion, egg, carrot, green beans, corn, feta, garlic, oil, cumin, pepper, and the remaining 1/4 teaspoon salt and stir to thoroughly combine. Let the mixture sit for 5 minutes so the breadcrumbs can absorb some moisture.
3. Divide the mixture into 6 even parts and shape each one into a 1-inch-thick patty. Arrange the patties on a baking sheet and bake for 20 minutes. Flip the patties over and continue baking until light brown, about 5 minutes. Serve the patties on the Freshka Bun, garnished with avocado, lettuce, and tomato.
